How To Cook Kohlrabi

A couple of summers ago David and I challenged ourselves to try out a different vegetable every time we went to the farmer's market or grocery store.  We ended up trying so many types of squash, jicama, parsnips, celeriac, and all kinds of other tasty and sometimes weird looking veggies.  One of our favorites that we were introduced to at the farmer's market one day was kohlrabi.  It was one that intimidated me a bit and I had to do some research to learn how to cook it properly.  Since I had to look in so many places to figure out how to conquer this beast, 



I took pictures when I made it last week so I could put the steps for our favorite cooking method all in one place.  Though you do have to plan ahead a little before preparing it, it really is a lot easier than it looks!



Step 1: cut off the stems and stalk



Step 2: peel the bulb

Step 3: slice one way

Step 4: slice those pieces the other way
Kind of like shoe lace french fries

Step 5: salting
Place a strainer inside a bowl and add your kohlrabi slices.

Sprinkle generously with salt
(We prefer celtic sea salt for its health benefits)

Stick it in your fridge for a few hours or overnight.

(the next day)
This step helps release all of the moisture so it does not come out in your pan while cooking.

Step 6: Cook it!
Start with some bacon grease, garlic and onion in a skillet
(you could sub for oil but the bacon grease really adds flavor)

Once onions are caramelized, add your kohlrabi
A castiron pan really adds a little something special here.

We served this with our favorite pecan crusted tilapia over a bed of greens from our CSA box and topped some avocado and mango salsa.


Yum!  This meal was so good my mouth is watering just thinking about it!
